How can you retain shared folders in Windows 2003?

We are using a SAN to host our networked drives. Whenever the SAN disconnects and reconnects the shared folder information does not return. Yet, we have to recreate permissions on 20 folders. There must be a solution to this!
Simple SAN Diagram:

USERS -Access Shares on-> Windows 2003 Server —-Has an iSCSI drive with —> LeftHand SAN Module
